Review
The Classic Sho-yu features a shoyu-forward broth with a tonkotsu base and a noticeable amount of oil. I would have liked a stronger soy sauce flavor, and overall, the soup didn’t quite satisfy me.
The noodles weren’t really my preferred style either, although they weren’t bad.
The seared chashu was tender and flavorful, and the menma had a good balance. The seasoned egg was disappointing, though, as it had very little flavor despite being an ajitama.
Both the soup and noodles were served at a proper temperature, which was a plus.
One other disappointing point was that the food images on the restaurant’s website were AI-generated or AI-edited. I would have preferred to see actual photos of the ramen.
