Review
The Tonkotsu Ramen was much better than the ramen I had on my previous visit. The broth had a clear pork bone flavor and was delicious. The noodles were also much better than before. The restaurant’s new website says the noodles are homemade, which may be why the texture had improved so much.
At first, the broth was noticeably not hot enough. After mixing it with the noodles, it became warmer, but I still wanted it hotter. I think the noodles and bowl may have cooled the soup down, which was disappointing.
The bamboo shoots were lightly sweet and well-seasoned. The soft-boiled egg was flavorful with a nicely runny center. The chashu was lightly seared, tender, and tasty, though its seasoning was mild. Personally, I do not like corn in ramen because it is difficult to eat at the end.
Bushido Ramen has made a huge improvement since my last visit. I could not recommend it before, but now I can recommend trying its Tonkotsu Ramen.
