Review
The JINYA Tonkotsu Black arrived steaming hot, exactly how I like my ramen. The pork broth had a strong tonkotsu flavor, with a garlic accent that worked really well. The thin noodles were a little softer than I would have preferred; a firmer texture would have made the bowl even better.
The chashu was tender and delicious, and the seasoned egg was the highlight. There was a whole egg in the bowl, with a still-liquid yolk and plenty of flavor. It was especially satisfying.
The ramen was a little expensive, but the free fresh garlic topping was a great bonus. I tasted the broth on its own first, then added the garlic partway through. It gave the soup a much stronger garlic punch and made for a delicious change of flavor.
The restaurant was not busy, and the ramen came out quickly. However, the lighting was too dim for my liking, and its warm tone made the food look unnatural in photos. I ordered tonkotsu this time, but next time I would like to try one of the chicken ramen options.
